| 500g dried Black Beans | |
| 2 tbspns Extra Virgin Olive Oil | |
| 2 cloves garlic | Minced |
| 1/2 tsp pepper | |
| 1 tsp oregano | |
| 1 bay leaf | |
| 1 medium onion | Chopped |
- Cover beans with filtered water, 5cm above top of beans in a glass bowl and leave overnight.
- Empty soaking water and transfer beans to a pot. Fill with fresh filtered water and bring to a boil. Add remaining ingredients and simmer 2 hours or until beans are tender.
- Remove bay leaf and puree half. Add pureed mixture back to soup, stir in together and serve.
