Black Bean Soup

500g dried Black Beans
2 tbspns Extra Virgin Olive Oil
2 cloves garlic Minced
1/2 tsp pepper
1 tsp oregano
1 bay leaf
1 medium onion Chopped
  1. Cover beans with filtered water, 5cm above top of beans in a glass bowl and leave overnight.
  2. Empty soaking water and transfer beans to a pot. Fill with fresh filtered water and bring to a boil. Add remaining ingredients and simmer 2 hours or until beans are tender.
  3. Remove bay leaf and puree half. Add pureed mixture back to soup, stir in together and serve.
